who am I and why am I doing this?

I've always been on the stocky side. I have a heavier frame, but a lot of muscle to go along with it. I climbed a lot of trees, I swam a lot, I adored the gymnastics programs I was enrolled in, I loved running around. But then in my early teens I started gaining more weight. I was very active but all of a sudden I had no energy, my hormones were all over the place (as evidenced by my period going absolutely nuts and eventually requiring transfusions). I never lost the weight, and in fact trying to ending up in my weight yo-yoing over the years and I'm now at my heaviest point ever and wishing I had the knowledge about nutrition I have now back at the very beginning. But I can't do anything over.
I was diagnosed with GERD 3-4 years ago and in the past year it's become really, really bad and has begun damaging my throat to the point that I had laryngitis for weeks despite medication changes. Because of this and my other weight connected problems (PCOS, hypothyroid, and with my weight at the point it is my BP is high) I've been approved for Kaiser's bariatric program and am planning to have roux-en-y gastric bypass surgery since that has a good chance of resolving my GERD. I wasn't sure I would be approved since my BMI was under 40. Not being fat enough... that was novel.
I'm now halfway through. This is where I am now.
Nutrition visit 1: done
Nutrition visit 2 (surgery class 1): done
General weight loss and nutrition class: done
Nutrition visit 3: done
Psych eval: 9/21
Nutrition visit 4 (surgery class 2): 9/28
Nutrition visit 5: October
Nutrition visit 6: November
Then as long as I've met my weight goal by that last visit (I have to lose 10 more pounds) I can go to the bariatric panel's review and then get referred to the surgeon.
This is a huge lifestyle change and I'm tracking everything on myfitnesspal and starting to work in things that I would eat post-op and phase out things that I'll have to give up.
